Community Food Provision, Preparation, Preservation and Packing

This is a required course for the Provider certification path.

This course begins with a 4-hour online portion (recorded webinars and downloadable handouts) that covers water, food & meal planning for teams and communities, food safety, meal preparation and an introduction to various methods of food preservation at home or in the field.  The online segments are made available several weeks prior to the 3-day on-site course.

During the online portion, students learn how to plan meals and ensure a potable water supply for a group. Students also learn essential food safety and calorie planning, and then put it all together with packing & preservation methods for both urban and remote environments.

The on-site, 3-day hands-on course teaches students several proven options for preserving, cooking and storing food.  Students learn time-proven methods for alternative refrigeration, quick long-term food storage methods, and build a heat retention cooker.  They also build a smokehouse from scratch.

Students go home with handouts, a prepared dry canned or dehydrated food item, a heat retention cooker complete with construction instructions and a blueprint for building their own smokehouse.

Day 1:  Alternative Refrigeration, Introduction to Food Storage structures, Food Dehydration and Dry Canning

Day 2:  Make A Heat Retention Cooker. *students go home with their own wonderbag that is made in class and can be used to discreetly and easily cook foods hidden in plain sight.

Day 3:  How To Build a Smokehouse.  *students work from a blueprint of a proven method for building a simple smokehouse that can be used to preserve meats, fish and game.

Date: Nov. 18 – 20th. 9 to 4 each day.

The online portion will be released to students by November 2nd.

Location: N. San Antonio Campus

*directions will be emailed to enrolled students.

Tuition: $225.  Students go home with handouts, a prepared dry canned or dehydrated food item, a heat retention cooker complete with construction instructions and a blueprint for building their own smokehouse.

A $110 deposit is required to hold a spot in this course.

*There is a $25 materials fee due to the instructor at the start of the class for the heat retention cooker exercise in addition to the tuition.

COURSE INFORMATION

Dates: This is a 4 week online course beginning on January 30th, 2023.

All course materials can be downloaded for personal future reference and use.

*Shipping of the poster is included for free with course tuition within the US. A digital copy will be provided to students outside of the US.

The online classroom access will close 4 weeks after the last week of class. Access will close on March 31st, 2023.

Registration closes on February 13th, 2023.

Course Hours: 16 contact hours for Physiology and Plant Science as well as Austere Medicine.
